There's a wide variety of sizes of Earl's coolers available from many of the Speed Shops on the net.

What is the difference between a "Plate Type" rad, and whatever they call the old tube and fin type?

A plate the is more efficient at heat exchange.  In cross section the "tubes" are flattened oval shaped and stacked on top of one another making the fins part of the coolant passage.
