-40 rated zip ties

I'm doing my stringers on the fuselage and I'm using epoxy and I want to use -40 rated zip ties to secure it instead of the wire. I've actually already used them. Do I need to redo with stainless wire or am I ok.

If you drill a small hole in the center of the stringer and use wire, you will never see the tie. The zip tie will leave a fair sized bump.  If the epoxy holds by its self, you could probably get by without the zip tie as well, cause the coats of poly brush will glue it to the fabric if that's what you are using.  I would go with the wire though just to be sure.  YMMV  JImChuk

Is this something that would be an airworthyness certificate problem

No but it will not look good.

If your set on using zip ties I would at least make a small groove with a dremal tool so they don't bump out the fabric.

The biggest problem with ties is they get brittle after a few years, and lose a lot of strength. Steel wire, not so much.

I know right. I'm waiting to cover until I can get to town and get the right wire.
